It's good to hear experienced distillers still use their air still for something so I can get an idea for what recipes work. I'm willing to drink anything that tastes good so I'm not worried about styles (gin, vodka, etc.). My air still is a Still Spirits brand so it's a hole-less 700mL variety.. The new Air Still Pro is creating a bit of a stir in some groups. Now that I have put 8 or so runs through it Im ready to review it. Air Still Pro (NZ):htt.
Just sharing my point of view, as an experienced user of my traditional still and air still pro. End result, it makes a great quality vodka (mostly because I start with a high quality wash). I have also made spirits in pot still mode from fruit wine and mead with good results, but I am more a vodka guy.. I use my air still for quick tests, to decide if a wash has a nice flavour for pot stilling or whether it's rubbish and I should fire up the reflux to strip it. One thing running a reflux has taught me is it's all about stability and quality, larger runs taste better than anything small and every percent matters, 96% tastes FAR better than 94%.
